One Pan Easy Chicken Afritada Recipe

Ingredients
  

  • 1 kg chicken thighs or drumsticks bone-in, skin-on preferred
  • 3 pcs red hotdogs sliced diagonally
  • 2 medium potatoes peeled and quartered
  • 2 carrots peeled and sliced
  • 1 bell pepper red or green, sliced
  • 1 onion chopped
  • 4 cloves garlic minced
  • 1 cup tomato sauce
  • 2 tbsp tomato paste
  • 2 tbsp soy sauce
  • 2 tsp fish sauce optional
  • 2 cups water or chicken broth
  • 1 bay leaf
  • Salt & pepper to taste
  • Cooking oil

Method
 

  1. Sear the chicken: In a pot over medium heat, add oil and brown the chicken pieces until golden on all sides. Remove and set aside.
  2. Sauté aromatics: In the same pot, sauté garlic and onions until translucent and fragrant.
  3. Build the sauce: Add tomato paste and let it cook down for 1 minute to develop richness. Then stir in tomato sauce, soy sauce, fish sauce, and water or broth. Add bay leaf.
  4. Simmer: Return chicken to the pot. Cover and simmer for 25–30 minutes on low heat.
  5. Add vegetables: Add carrots and potatoes. Continue simmering until vegetables are tender (about 10–15 minutes).
  6. Add hotdogs and bell peppers: Stir in sliced hotdogs and bell peppers during the last 5 minutes of cooking.
  7. Season and finish: Adjust salt and pepper to taste. Let everything marry for another 3–5 minutes.

Notes

Serve hot with a bowl of rice and a smile.
