Ingredients
Method
- Sear the chicken: In a pot over medium heat, add oil and brown the chicken pieces until golden on all sides. Remove and set aside.
- Sauté aromatics: In the same pot, sauté garlic and onions until translucent and fragrant.
- Build the sauce: Add tomato paste and let it cook down for 1 minute to develop richness. Then stir in tomato sauce, soy sauce, fish sauce, and water or broth. Add bay leaf.
- Simmer: Return chicken to the pot. Cover and simmer for 25–30 minutes on low heat.
- Add vegetables: Add carrots and potatoes. Continue simmering until vegetables are tender (about 10–15 minutes).
- Add hotdogs and bell peppers: Stir in sliced hotdogs and bell peppers during the last 5 minutes of cooking.
- Season and finish: Adjust salt and pepper to taste. Let everything marry for another 3–5 minutes.
